Wheat flour is the main material for noodle, bread, biscuit and various cakes. It is produced from wheat grains through milling process.
Wheat flour is categorized according to its protein content. It is available in the market with the protein content of 8% - 9%, 10.5% - 11.5% and 12% - 14%.

Wheat flour contains gluten that makes it different from flour of non-wheat. The gluten has the characteristics of elasticity. The elasticity of the flour is required for bread to breed, for noodle to be elastic, for wrapper of martabak to stay intact. Generally, the gluten content determines the level of protein. The higher the gluten content is the higher the protein content would be. The gluten of the flour, which determines the quality of the end products, depends on the type of the wheat grains.
